Pumpkin Pie Protein Pancakes!

As many of you know, I LOVE fall and pumpkin-everything (and apparently alliteration)! Here's a festive recipe that's both nom-worthy AND super clean for you fellow pumpkin lovers out there who are counting your macros :) You can tweak it per your tastes & goals. What's Cool About This: 

  • No Flour
  • No Dairy
  • No Added Sugar
  • No Saturated Fat
  • ~ 25g Protein, give or take
  • ThatPumpkinLyfe

*RECIPE-ISH: 

Okay, it's definitely more of a guideline*

  • 2 Scoops Vanilla Protein Powder (I prefer plant-based protein, it's easier to digest)
  • 3-4 Dashes Cinnamon and/or Pumpkin Spice Blend 
  • 1-2 Tbsp Pumpkin Puree, depending on your level of Pumpkin-love (Libby's canned pumpkin is an easy go-to, it has one ingredient!)
  • 1-2 Tbsp Egg Whites
  • 1-2 Tbsp Unsweetened Almond Milk OR Water
  • OPTIONAL: 1-2 Tsp Chia Seeds

All the liquid ingredients are really up to you and your consistency preferences. If you want more protein, just add in more egg whites and you'll need less almond milk or water (and vice versa). I also like to throw chia seeds into my batter - it adds texture and a touch of fiber, protein, and omega-3's! 

Combine all ingredients to desired consistency.  Spray pan and cook on low-to-medium heat. You can top with almond butter, maple or agave-syrup, or a sugar-free alternative. Enjoy! (I hope... satisfaction not totally guaranteed.... But I tried!)
